Pickled Red Onions

Ingredients

Slice Red Onion and Garlic

  • 1ctRed Onion
  • 2ctGarlic Clove

Season Vinegar for Pickling

  • 3tbspWhite Sugar
  • 1.5cWhite Vinegar
  • 2tbspSalt
  • 1tspPeppercorn

Steps

In a small pot, pour in white vinegar. Add the sugar, salt, and peppercorns and stir until the sugar has dissolved. Cover and bring to a boil.

Boil Vinegar for Pickling15 mins.

Slice the red onion into long strips by cutting in half and then slice along the long side of the onion. Mince the garlic and combine the red onion and garlic in a mason jar.

Slice Red Onion and Chop Garlic10 mins.

Pour the boiling vinegar mixture into the mason jar. Using a spoon push the onion and garlic to ensure it is submerged in the pickling liquid.

Let the mixture cool and then cover and place in the refrigerator. I like to refrigerate them for at least a few hours before serving.
